Chicken Tetrazzini


OK so I just looked on the counter, next to the newly prepared chicken tetrazzini that I spoke of before.  It seems that the recipe comes from a book entitled Betty Crocker’s Dinner in a Dish Cookbook.   The book looks, and in fact is, older than I am, but the recipe is a classic!  I’m gonna type it below!

Serves 6-8

1/4 cup butter

1/4 cup Flour

1/2 tsp. salt

1/4 tsp pepper

1 cup chicken broth

1 cup whipping cream

2 tbsp. sherry

7 oz spaghetti, broken into small pieces, cooked and drained

2 cups cubed cooked chicken or turkey

1 can (3oz) sliced mushrooms, drained

1/2 cup grated Parmesan cheese

Heat oven to 350 degrees.  Melt butter over low heat.  Blend in flour and seasonings.  Cook, stirring until mixture is smooth and bubbly.  Remove from heat.  Stir in brother and cream.  Heat to boiling, stirring constantly.  Boil 1 min.  Add Sherry, Stir in spaghetti, chicken and mushrooms.  Pour into a square baking dish, 8x8x2".  Sprinkle with Parmesan cheese.  Bake 30 min., or until bubbly in center.  If desired, brown top by placing briefly under broiler.  Garnish with parsley and green olives, if desired.

 

It should be noted that we never, that I can remember used green olives or parsley for that matter.
