At work yesterday I ran into a quandary. I went to Bed, Bath, and Beyond before work and bought a caphalon panini pan. I was going to spend the $100 and get a plug in the wall press but I thought I could use the pan for other things and didn’t have a lot of money to spend.
My quandary was that I wanted to make a pesto but had no basil. I thought well what can I do!?! So I looked around and noticed that I had Rosemary, and thyme. I didn’t have the traditional pine nuts but had pecans. So I whipped together a pesto with Rosemary, thyme, pecans, garlic and Parmesan and oil. I then took these nice hearty baguettes that we have and put the pesto on each piece of bread then a piece of provolone cheese on each side and sliced turkey. Then I cooked it on the press and the most amazing turkey panini’s came out!
Rosemary, thyme, and pecan pesto
2 bunches Rosemary
1 bunch thyme
3 pieces of garlic
1/2 cup of chopped pecans
1/2 cup parmesan
1 cup oil- I use an olive and veg mixture.
S & P to taste
Wash Rosemary and thyme and strip leaves off of each. Put in blender and add other ingredients. Blend until smooth. Taste and season with salt and pepper.

*On a side note I heard a story on NPR on the way home last night about something harming the basil leaves in NY and Florida so this might be a good alternative.
