Kale and Spinach Pesto


Ever wonder what to do with kale stalks? I buy my kale for home use in a bag, the leaves all ready off the stalk. For work they come in with the stalk and we have to clean the leaves off them. Sometimes I’ll add them to my veggie stock. But I was looking for something else to do with them, I hate throwing bi-products away. So I use everything for a stock or something else.

Today, I was trying to come up with a starch for work. I had some spinach, parmesan and kale stalks. I googled kale stalks and this recipe came up. So I just substituted the parsley with spinach, left the pine nuts out, in case anyone was allergic. I buzzed up the stalks with the spinach, olive oil, garlic, parmesan, salt and pepper. I added it to some macaroni and chopped up some tomatoes and I had my starch for the day.
