I did comedy on Sunday night, my longest set ever, 20 minutes. When I finished one of the audience members approached me, I spoke about my weight issues in my set, she told me that I should try a diet called The Virgin Diet. She said it and I immediately thought, I’m all ready on the virgin diet and it ain’t working. She then went on and told me that I looked great and didn’t need to lose weight. I told her how much I weigh, 215lbs, and she couldn’t believe it. She told me that she thought I looked no more than 150lbs. That felt good, but it’s not true. It’s so weird that I am so heavy but I don’t look like it, I have the problem all the time. I suppose that is better than weighing 150lbs and looking like I weight 215lbs right?
I had yesterday afternoon so I spent it at home doing laundry and watching a documentary called Sellbrity. It’s about paparazzi and celebrities. It was kind of interesting. I also cooked myself my own meal in my own kitchen, just for me. It felt nice and even though I love being in the kitchen this month I’m looking forward to cooking and taking care of myself again.
So, I know, you’re interested in the Sweet Potato Shepherds Pie. I wish I had a recipe for this but I don’t so I’m just going to tell you what I did. We had taco’s last night at work so I took the left over taco meat, added it to a pan with onions, carrots, peppers and garlic that I had sautéed. Then I took some sweet potatoes that my lovely sous chef mashed for me. I put them on top of the meat and veggie mixture and then finished it in the oven. Now, in my recipe we used butter on the sweet potatoes but you could have easily used olive oil and I also topped it with parmesan cheese. I also made just a veggie version of the same thing. Instead of using meat I added some spinach to the veggie ones and I did not add any cheese to the top of it. I seasoned each of them with cumin, salt and pepper, as well as it had the taco seasoning from the night before. Here are some pictures!
