Mardi Gras in New England, never again.

For the past five or six years I’ve always spent Mardi Gras in Baytowne Wharf in Destin, Florida. For some reason, when Mardi Gras came around this year, I did not make the plans to go down there. Life was too busy, I was saving my money for a trip I might take in June. So last night I went to my favorite bar, played trivia and sulked with a friend who has lived in New Orleans. Before that I was at my friend Braby’s house drinking wine and laughing. Of course, laughter makes everything better.

I have a busy weekend coming up. I’m traveling down to Philadelphia to work on a project with a friend.

Next year I vow to be on the gulf coast for Mardi Gras!

Social Media Circuit

Sorry I’ve been out of touch the past couple of days friends. A stomach bug grabbed hold of me on Tuesday and I’m slowly recovering. I’m on the mend and am going to attempt to go to work for a few hours today. In lieu of a blog post I’m posting a link to a friends show that I taped last week. We talk about food, social media and my blog!

Checking in…….

Do you ever feel like you find yourself apologizing to someone every time you see them?  I feel that way with you all.  I feel like I constantly apologize for being a bad blogger and not blogging often enough.  And then I go into this rant about how I’ll be good and I’ll never do it again and then I let you down again.  So I’m going to make this the last post that I apologize in and whatever will be will be.

The past week has been cathartic.  While I wasn’t on vacation I did spend as little time as possible working and saying goodbye to friends.   And now I have a cold.  I’m pounding my body with Vitamin C and hopefully things will get better soon.  My eating habits have been atrocious, I ate pizza all weekend.  Last night I went out to dinner with a friend and ate cheese fries and a turkey club.  So while I’m juicing almost everyday I’m still not eating properly.  So starting tonight, I’m going to go back to the ‘what I ate today’ posts.  Did you all like those?  I just felt like I was barraging you with too much stuff each day.  Anyway, look out for that each day.  One change I have made is that I’m not drinking coffee anymore.  I haven’t had coffee in at least a week now.  I’m sticking with green tea and honey in the morning and throughout the day if I need a little caffeine burst.

 

To recipe or not to recipe, that is the question……

I just finished cooking for a workshop of hungry actor’s who were training at a month long intensive in Shakespeare.  Sunday night, as I was sitting at the bar soaking in the end of our time together, I was approached by one of the participants who said “I find it fascinating that you didn’t use any recipes during the workshop.”  I’ll tell all my blog readers a secret.  I don’t believe in recipes.  It’s not that I don’t believe in them but I have the voice of many culinary instructors in the back of my mind saying “A recipe is just a guideline.”

Truly, a recipe is a guideline or a map, if you will.  I will often google a recipe to get a basis for how I want to make something and then make it my own.  When you see recipe’s on this website that’s mainly for your benefit.  Often, when testing a recipe for you all, I have to stop what I’m doing, write it down and it makes the process much longer.  Working without recipes and creating something by tasting it and changing it is what creates the magic that I love in the kitchen.

That being said baking is completely different.  When you make you have to use a recipe because the measurements are so precise.  So in this new year I urge you all to be a little more free with your cooking.  Add something sweet to a salty recipe.  Find something in the fridge that needs to be used up and create a recipe around it.  Cooking can be as much fun or as much of a chore as you want.
