Am I growing up?

Last Thursday I was talking with a friend about going out to dinner before going to an event at work.  We picked a few places we wanted to go, she walked away and I thought to myself, ‘self, you can’t really afford to drop $50 on dinner, and for god’s sake your a freaking chef’.  So I calmly went into her office and invited her over to my house for dinner.  I didn’t do anything fancy, just went to the store, got some salad greens, cucumber and we made a salad with the roast chicken that I cooked in the last video.  She brought wine and we both spent $8 on the evening.   I would even argue that we had a much better time than going out to a restaurant.  Secretly, in my mind, I’m beginning to think that I might just have friends over for dinner from now on.  It’s so much cheaper and so much more fun to sit around the dinner table and leisurely talk, eat etc.

So last night I had a few friends over for dinner and made a pasta dish called Pasta Alla Vodka.  I filmed it for my next episode so look for that the next few days. Here’s a sneak peek at the final result!  Have a great week everyone.  

What I ate today…..

I can feel my schedule getting busier and being careful about what I eat going down the tubes. I actually didn’t do too bad today but I decided not to go to the grocery store this evening so what tomorrow brings might be interesting.

I had my amaranth and an apple for breakfast, pizza for lunch and then chicken thighs and acorn squash for dinner. All in all not to bad. I won’t have a day off until I go on vacation the 21st. These pictures are about to get interesting!

What I ate today

Today when I got to work there was a bowl of candy on the desk next to my computer. First thing I did was move the bowl. I lasted 3 hours before I dived into it.

Other than the candy not a bad eating day. My new favorite thing to do is buy organic chicken breasts at the store and then roast them. Cook them at 400 for 40 minutes and they come out perfect. I made sweet potato fries to eat with them. What did you all eat today? Anyone watching Top Chef? Thoughts?

A Foodie’s Life- Ratatouille!

Here it is, episode two of the my new youtube series.  In this episode we do ratatouille.  I just looked at the video and for some reason I said that I was using butternut squash, NO butternut squash was used in this recipe.

 

 

Ron’s Ratatouille

Ingredients

1/2 onion Sliced

1 yellow Squash

1 eggplant diced

7 mushrooms sliced

2 carrots

3 cloves of garlic diced

2 cans of diced tomatoes

Method

1. Heat pan with olive oil.  Add onions and cook until tender.  Add garlic, cook for a few minutes.

2.  Add mushrooms cook until translucent.

3.  Add yellow squash and eggplant cook down a few minutes.

4. Add 2 cans of tomatoes, 1 cup of vegetable stock and put temperature on low and cook for 45 minutes, until all veggies are tender.
